FEW Gin  and KOVAL Bourbon

FEW Gin and KOVAL Bourbon are fine spirits produced from two local-Chicago distilleries that have been recently established and have revitalized the craft of distilling.  Read about the history of each below.

In 2011, Paul Hletko opened FEW Distillery in Evanston, a noted dry suburb just north of Chicago, after decades of repeal.  Paul was inspired by his family’s history in brewing beer to develop handcrafted, small batch spirits. FEW gin is made of equal parts, craft and 100% grain to glass.  Paul was named the 2018 world distiller of the year in Gin Magazine’s annual “Icons of Gin” feature.

Established in 2008, KOVAL produces organic whiskey, liqueur and specialty spirits in Chicago’s first small craft distillery since the mid-1800s.  Founded by Dr. Robert and Dr. Sonat Birnecker, who chose to leave their academic careers to bring the distilling traditions of Robert’s Austrian family to America.  The distilling process and history of the KOVAL name came from both sides of the family.  All KOVAL Spirits can be traced to their charred barrel and shipments of raw materials that come from organic farmers.

Prize value:  $100
